Mucuna seed, India species (Mucunapruriens (L.) DC.var.utilis) is widely used in the treatment of Parkinson disease and increase libido in male. But, the study of amount of nutrients and fiber in Mucuna seed growing in Thailand has less. Objectives: This study was aimed to investigate the amount of protein, carbohydrate, fat and fiber in Mucuna seed and the effect of heat in the preparation process. Methods: The two samples in tablets (DOPAM® and Siam Herb®), one sample in capsules (HH®), two samples of Mucuna seed from Ubon Ratchathani and Rayong provinces, tworoasted samples of Mucuna seed from Ubon Ratchathani and Rayong provinces and one baked sample of Mucuna seed from Ubon Ratchathani province . Results: Those samples have protein contents of 12.43, 11.64, 28.23, 28.73, 28.96, 33.21, 27.96, and 27.86 %w/w, respectively, carbohydrate contents of N/A, N/A, 63.34, 62.36, 61.62, 56.99, 62.76 and 62.95 %w/w, respectively, fat content of 1.12, 1.80, 4.89, 4.89, 4.93, 5.11, 5.09 and 5.17 %w/w, respectively and amount of fiber in the following order of 0.04, 0.06, 0.13, 0.38, 0.32. , 2.41, 0.76 and 0.76 %w/w. Conclusions: Protein, carbohydrate and fat are found in Mucuna seed and those are not degraded by heating from preparation process.
