Introduction: The study of anticancer activity of Thai vegetables and herbs is gaining popularity. This research is interested in examining anticancer activity of coriander towards cell lines of colon cancer, which are common cancers found in males and females. In addition, this research aims at developing a health product from coriander in order to increase its value and generate more household income for farmers. Methods:

Coriander trunks and leaves vs. root were extracted with two solvents (water and ethanol). All four types of crude extracts were diluted into three concentrations each (10, 100 and 1000 µg/ml). Studies of anticancer activity of coriander were conducted on colon cancer cell lines (HT-29). Cell viability was measured by MTT assay. Cell morphology was observed via phase contrast microscope. The expression of proteins associated with apoptotic pathway was determined by Western blot. Later, the coriander crude extract with anticancer activity was formulated into a gummy jelly health product. Results: All four coriander crude extracts can induce HT-29 cell death (p-value < 0.01). The most effective coriander crude extract in this study was the ethanol extract of the root at 1000 µg/ml. This extract induced HT-29 cell death after 24 hours of incubation (p-value < 0.01). Morphology changes

of cancer cells due to apoptosis, such as cell shrinkage and cell detachment were observed. These findings correspond to the reduced expression of Bcl-2, Mcl-1 and p65 proteins induced by ethanol extracts of coriander root at 100 and 1000 µg/ml. Such low protein expression leads to cancer cell death via apoptotic pathway. The coriander root crude extract was subsequently developed into gummy jelly as a health product. Conclusion: All four coriander crude extracts can induce cell death of HT-29 cells. The ethanol extract of coriander root at 1000 µg/ml showed highest activities to induce HT-29 cell death through apoptotic pathway by reduce the expression of p65 protein. This coriander root extract was formulated into gummy jelly health product.
