The objective of this study was to develop the method which was suitable for the analysis of heavy metals (Cd,Zn,Cu,Fe and Pb) in shallot samples using atomic absorption spectrophotometry (AAS).In addition,the amount of heavy metals in those samples was also determined. Materials and Method= The method for analyzing of heavy metal in shallot samples by AAS were developed and validated. The methods were reliable in terms of accuracy (% recovery of 92.95-99.29% ), linearity (r2 > 0.996), intra precision (% RSD of 0.41-1.27%) and interday precision (%RSD of 0.16-1.57%). Eighteen shallot samples from Srisaket province were randomly selected in order to determined the content of heavy metals. Results= It was found that sample treated by dry ashing technique and then following by the nitric acid digestion was the most suitable method to prepare shallot samples. The result also revealed that both Cd and Pb were not found in all samples while the average levels of Zn ,Cu and Fe were detected at 1.72-4.67,0.34-0.94 2.45-7.45 mg/kg, respectively. Conclusion= These result indicated that using dry ashing technique and nitric acid digestion to prepare samples can be used with atomic absorption spectrophotometry to quantify the amount of heavy metals in shallot.
