Thunbergia Laurifolia Linn. or Rang Chuet is used in folk medicine remedies for antidote of all toxic substances. At present Rang Chuet is available in fine crude-powder and capsules. The objective of this study was to develop the instant Rang Chuet tea product that its color, odor and flavor meet customers’ satisfaction. Aqueous leaves extract of Rang Chuet and other ingredients were dried and mixed by spray drying technique. The final products (6 formulas) were then chemical, physical, and sensory perception evaluated. Results revealed that flavonoids content in 6 formulas were found in the range of 0.6 – 3.0%. The pH of instant tea (6 formulas) when dissolved in water were in the range of 5.84-7.29. The percentages of loss on drying (%LOD) in each formula were in the range of 1.9 – 5.7. The results of physical evaluation by X – ray Powder Diffraction method showed the major peaks of Rang Chuet in all of 6 products with different degree of crystalline. Rang Chuet and other compounds of 5 formulas were exhibited crystalline characteristic whereas product from one formula ( the 3 rd formulas ) was observed in purely amorphous form. Results of optical microscope showed the different in sizes of each product (6 formulas). The result of Fourier Transform Infrared Spectrometry method (FT-IR) showed that all major peaks which represented major functional groups of Rang Chuet extract still remained in 6 products. There was no new noticeable peak found in FT-IR result. Therefore, this can be explained that no chemical reaction appeared between Rang Chuet crude extract and other ingredients. Result from the consumer test revealed that the 5th instant Rang Chuet formulas (contains Rang Chuet extract 80 %, Lactose 19.97 % and vita-sweet 0.03 %) meet the highest satisfaction scores (86.67%) following by the 6th instant Rang Chuet formulas (13.33 %). For this reason, the 5th instant Rang Chuet formula has high potential to launch into the market.
