The objective of this study was to develop film coated soybean extract. Soybeans were fermented with Aspergillus oryzae in order to increase antioxidant property. Soy beans were milled and extracted with hexane, ethylacetate and ethanol by soxhlet apparatus. The extracts were investigated for free radical scavenging activity by ABTSo+ decolorizing assay, FRAP and Folin-Ciocalteu method. Following wet granulation, the extract was pressed into tablets and coated with Methocel E5/E15 Results showed that fermented soy bean extracted by ethanol gave highest antioxidant activity; Trolox Equivalent Antioxidant Capacity (TEAC) = 0.022 g Trolox /1 g extract, FRAP value = 0.043 and 0.028 g Tannic/1g extract. The fermented soybean extracted from ethanol also exhibited the highest amount of total isoflavone. The film coated tablets of the extracts met criteria according to US pharmacopeia. In conclusion, film coated tablets of fermented soybean extracts could increase antioxidant property and increase tablet stability.
